Baked Kesong Puti & Tomatoes

This baked feta and tomatoes appetizer is the perfect example of how simple ingredients come together to create a flavor packed dish. Easy & delicious, and ready in 30 minutes!

 

Serve it as an appetizer with some toasted bread or sliced veggies. You can also mash it together and serve it as a sauce over chicken or pasta.

 

Yield: 6 servings   Time: 30 minutes

 

INGREDIENTS 

  • 250g  kesong puti
  • 1 1/2  cups cherry tomatoes
  • 1/4  cup olive oil
  • 1 teaspoon Lasa's Oregano Leaves
  • a pinch of salt for the tomatoes
  • ground black pepper to taste

DIRECTIONS

  1. Preheat the oven to 400 °F, 200 °C.

  2. Place the kesong puti in the center of a baking pan.

  3. Arrange the tomatoes around the kesong puti and season them with salt and pepper.

  4. Drizzle the olive oil over the tomatoes and feta cheese.

  5. Season with Lasa's Oregano Leaves.

  6. Bake on the center rack of the preheated oven for about 10 minutes.

  7. Turn the broiler element on high and transfer the baking tray to the top rack. Broil until the kesong puti gets gooey and the tomatoes are wrinkled. About 3 minutes. Keep a close eye on it so that it does not burn.

  8. Serve with toasted bread, sliced veggies, or pasta.
