Spiced Creme Brulee

Burnt sugar on creamy custard = simple beauty and decadence. Creme Brulee is the ultimate  dessert.


Yield: 3 servings  Time: 1 hour and 30 minutes



  • 2 cups heavy cream

  • 1 tsp vanilla extract

  • 2 tsp Lasa's Autumn Blend

  • 1/8 tsp salt

  • 3 egg yolks

  • 1/2 cup sugar (plus more for topping)


  1. Pre-heat oven to 325 degrees.

  2.  Heat heavy cream, vanilla extract, salt, and Lasa's Autumn Blend in a sauce pan on low heat. Set aside.

  3.  In a bowl, beat yolks and sugar together until light in color.

  4.  Pour in the hot cream gradually, mixing continuously.

  5.  Pour into 3 ramekins and place in a baking dish. Fill dish with boiling water halfway up the sides of the ramekins.

  6.  Bake for 30 to 40 minutes, or until centers are barely set. Cool completely. Refrigerate for several hours and up to a couple of days.

  7.  When ready to serve, top each custard with about a teaspoon of sugar in a thin layer.

  8.  Using a torch, melt the sugar to for a crispy top. If you don’t have a torch, you can broil the crème brûlée to melt the sugar.
